Kopi Luwak is the most expensive coffee in the world. This luxurious beverage is also known as civet coffee or civet cat coffee.

Kopi Luwak coffee sells for anywhere between $100 and $600 per pound. A cup of cafe Luwak coffee in an upscale restaurant would cost about $33.00 to $50.00. Of the few restaurants or coffee shops that carry Kopi Luwak, it is reported that typical sales are about four cups sold per week.

Don't let the Hawaiian sounding name fool you. When you buy Kopi Luwak it is not coming from Honolulu as most great kona coffee is produced. The civet coffee beans originate from the islands of Sumatra, Java and Sulawesi which are located in the South Eastern Asian countries.

HOW ARE KOPI BEANS PRODUCED?

The Asian palm civet, a cat-like animal also known as a luwak, eats the fresh coffee cherries that have just fallen from the trees which typically have the ripest and best coffee beans inside. When the civet eats the coffee cherries but it doesn't digest the beans inside. After the beans pass through the civet's digestive system, workers collect them and wash them in spring water.

How Taste is Derived

The internal fermentation by digestive enzymes adds the different flavor to the beans, which when described like a fine wine, the coffee is rich with jungle and chocolate undertones.

The Kopi beans are lower in total protein, which indicates that while the cats digest these beans the proteins are broken down and extracted out of the bean. Since proteins typically make coffee bitter during the roasting process, the lower contents of proteins decrease the bitterness of Civet coffee.

Known in the coffee industry, wet processed or fermented coffee beans have superior flavor to dry-processed coffee. Since the cats ferment these beans digestively you would have to conclude the richness and better flavor of the final product.
